One thing we’ve come to know about Xavier Bishop, he’s going to collaborate with a coffee shop or café. We’ve seen him pop up in Pearland with Lit Java, serve sweetness at Cougar Grounds with the University of Houston, and even take things to outer space with NASA.

No matter the setting, every collaboration lifts us to new heights of luxury, because that’s what we’ve come to expect from this royal dessert brand. But recently, Bishop made a move that feels just as elevated as his confections: the parent company, formerly Zay’s Signature Creations, has officially rebranded to Regal Pineapple Hospitality, a name fit for the empire he’s building.

Last week, I had the pleasure of sitting down with Xavier Bishop for a podcast interview where we dove into the name change and the meaning behind the pineapple in hospitality. According to the Brookie King himself, “Pineapples were a symbol of hospitality in ancient cultures, where only the wealthiest and most affluent people were able to get them. It was the sign of a true welcome, and that’s where the pineapple comes from in hospitality.”

His latest venture is yet another example of how Bookie’s Brookies continues to stand out — both in presentation and through its signature T.O.U.C.H. Program, which sets the brand apart in the luxury dessert niche. It’s a step above, offering not just sweets, but an experience.

As of October 5, 2025, Bookie’s Brookies are officially available for purchase at Café 91 located inside of Inspire Church. Starting with small-batch, select flavors, Bishop plans to expand over the next few months to offer a full lineup of Brookie varieties at Café 91. On opening day, churchgoers were treated to samples of the flagship Chocolate Chip Brookie before heading to the counter to place their orders for Peanut Butter, Chocolate Chip, or Vegan Chocolate Chip.

This partnership might have taken much longer to come to fruition without the help of Houston philanthropist and jewelry designer Sharon McLaurin, a longtime supporter of Xavier’s work. After recently attending an event at Inspire Church, McLaurin noticed a need within Café 91 and immediately took action, arranging a meeting between Bishop and the church team to discuss what would become a sweet new collaboration between Bookie’s Brookies and Inspire Church.

Watching Xavier Bishop evolve from local pop-ups to the grandeur of Regal Pineapple Hospitality has been nothing short of inspiring. His ability to merge faith, flavor, and fellowship reminds us that true hospitality is about more than good food, it’s about making people feel seen and celebrated. And at Café 91, that mission tastes a little sweeter.

The debut of Bookie’s Brookies at Café 91 marks more than just another partnership, it signals the next chapter in a brand that continues to redefine luxury through intention.
