Just in time for Black History Month, Xavier Bishop, founder and creator of Bookie’s Brookies— the leading brand of Zay’s Signature Creations—launches his kiosk at Johnson Space Center. While the kiosk is exclusive to NASA employees, this milestone opens up a whole new world of possibilities for his brand.

Bookie’s Brookies will be available at Johnson Space Center every Wednesday from 10:00 AM to 2:00 PM throughout the 2025 calendar year. This partnership comes as a result of Xavier Bishop connecting with the Starport – NASA Exchange. A program designed to provide employees with more services and resources. NASA employees can enjoy a rotating menu of flavors, whether they’re looking for a late breakfast or lunch. Pre-orders for the following week will also be available.

Strategic partnerships like this one with NASA allow Xavier to introduce Bookie’s Brookies to new customers who may not have encountered his brand before. By aligning with such a prestigious institution, he not only expands his reach but also strengthens his brand’s credibility while building a loyal new customer base.

Xavier credits his success not only to his perseverance and ability to adapt to market changes but also to the unwavering support of his team—including friends, ambassadors, service providers, and investors like Sharon McLaurin, an author, philanthropist and jewelry designer.

Sharon has been a strong advocate for Xavier’s journey, saying, ‘Being a young business owner inspires me to be supportive. I don’t care if it’s money or anything else—I just fit in where my strengths are. Whether it’s financial support, introducing him to young entrepreneurs in Shepherd, TX, or offering a space for his events, I believe in providing shoulders to stand on. Sometimes, you can’t reach the top without something solid beneath you.’

Her generosity extends beyond business, as she has also been a dedicated supporter of Brookie’s Wonderland, donating toys to bring joy to children.

Since 2020, Zay’s Signature Creations has been a five-star hospitality company, but none of its brands have seen as much success as Bookie’s Brookies. Xavier attributes the bakery and dessert brand’s rapid growth to the way it has been nurtured from the start.

‘I think, people are drawn to it because of the brand’s appeal and the character behind it—The Brookie King. There’s a community behind it, and the support we’ve received has been instrumental in our overall growth,’ he says.

While this milestone and the success of such a high-profile partnership may seem like the pinnacle of achievement, Xavier has no intention of slowing down. He continues to curate unforgettable experiences for event attendees while delighting dessert lovers with every new Brookie flavor.

Recently, Bishop was honored with the Taste of Success 2024 award for culinary innovation and excellence by Black Book Houston, a prestigious organization dedicated to connecting Black buyers with Black-owned businesses through their directory and fostering a network of young as well as seasoned Black professionals.

We will continue to follow Xavier’s journey as he grows his brands and inspires young entrepreneurs across the city and beyond. While Bookie’s Brookies has reached new heights, Zay’s Signature Creations’ other ventures—such as luxury picnics and event production—have been far from idle.

In the coming months, Bishop’s company will produce several exciting events, including grand openings, pop-up restaurants, and something yet to be announced, that’s just a touch racy.
